We all love flowers for their beauty, fragrance and colour, and it’s becoming more common to see them on our plates. Of course, edible flowers have been kitchen ingredients since Roman times, popular throughout medieval cookery, and documented in recipes by Hannah Glasse, till the Victorians spurned them, but the 20th century saw a rebirth of floral ingredients, and nowadays it’s hard to find a cheffy dish without a scatter of petals.
